Così, the Boston, Massachusetts-based fast-casual restaurant chain known for its homemade flatbread, opens its eighth eatery in Costa Rica this Friday, November 10.

The new Così locale will be inaugurated in the northern San José suburb of Guadalupe, in the canton of Goicoechea, at the Distrito Uno shopping plaza.

Situated next to Distrito Uno’s new Auto Mercado grocery store, Così in Guadalupe will offer the fresh salads, sandwiches and hearty soups the eatery is known for.

“At the center of every Così is a hearth, where our centuries-old flatbread recipe is made every 20 minutes,” says the Così website.

This new locale rounds out the trendy café’s seven other locations throughout the greater San José metropolitan area: Multiplaza – Escazú, Distrito 4 – Escazú, Plaza Carolina – San Pedro (San José), Plaza Real -Alajuela, Paseo de las Flores – Heredia, Sabana Business Center (La Sabana Park), and City Place – Santa Ana.

And, hold on … By the end of the year, eastern San José will get in on the Così action with another new locale opening in Curridabat at Plaza Vivo diagonal to Walmart, said Così Costa Rica’s marketing manager, Cristina Escalante.

The name Così comes from the opera Così fan tutte, which was a favorite of the café’s original owner. The original Così restaurant, founded in the United States in 1996, was based on a small cafe in Paris, France, according to information on Wikipedia.
