Kava Delfin considers the environment, our local community as integral pieces of our success. We hope to set an example for good corporate role models who consider people, and the planet, in addition to profits, when making strategic decisions.

Kava Delfin is the first restaurant fully dedicated to marine mammal conservation and the local Costa Rican Caribbean community. We are dedicated to the principles of marine mammal conservation; organic, sustainable cuisine; and supporting our local community. Our primary mission is to support the conservation and welfare of whales and dolphins (Cetaceans) by allocating up to 50% of our after tax profits from our operations to non-profit entities whose purpose is marine mammal and ecosystem conservation.

Our model allows the revenue from our Benefit Corporation’s activities to support non-profit entities across the globe that have the strongest impact on Cetacean welfare. We are also deeply committed to supporting and preserving the natural landscape and cultural heritage of the Caribbean communities of Costa Rica, where the first Kava Delfin location will be located.

There is nothing more important to us than the safety and freedom of cetaceans on earth. The Kava Delfin founders wanted to create a unique model that would generate revenue that could be provided to the most important organizations in the world that educate about and defend dolphins and whales on earth.

The founder of Kava Delfin, John Shepherd, had first spent time in Costa Rica during his school years at the Cushman School in Miami, Florida. He was fortunate to have a chance to spend his spring break on a educational school trip to Costa Rica. They traveled to Costa Rica with Costa Rican Adventures, the creation of Stephen Brooks, the owner and founder of Punta Mona Center for Sustainable Living & Education, an 85 acre off the grid, family owned environmental education center, botanical collection, permaculture farm and eco-lodge, dedicated to sustainable ways of living.

John fell in love with Costa Rica then, and traveled back many times over the next 16 years, once almost purchasing a 50-Acre organic macadamia farm. The trip to Costa Rica, led by Stephen Brooks, changed John’s life forever and set him on a path that would lead him to a dedication to principles of organic agriculture, sustainability, and a desire to educate the world on conservation and deep ecology.

The Kava Delfin team decided that the best way to realize their goals was an organic restaurant, vegan bakery, yoga center on the southern Caribbean coast of Costa Rica, as a launching pad for the Kava Delfin brand and model worldwide.

Kava Delfin is committed to using ingredients from local organic farms and serving what is in season. Kava Delfin will be an oasis of gourmet, organic, local food comprised of some of the best ingredients found in the tropics and beyond.

Kava Delfin intends to enact policies that are not only designed to inspire actions that are good for our customers health & well-being, but also the health of the planet as a whole. We care as much about our profit as we do our customer’s health, and the environment.

Our restaurant will use sustainable, resource efficient models of renovation and operation and reduce the overall impact of the built environment on human health and the natural environment by: efficiently using energy, water, and other resources; protecting occupant health and improving employee productivity; and reducing waste, pollution and environmental degradation. Strong community ties and support are important to us.
